Las hojas contienen los denominados gluc\u00f3sidos de esteviol, que en la hoja tienen un poder edulcorante aproximadamente 30 veces mayor y, de forma aislada, 300 veces mayor que el az\u00facar de remolacha o el az\u00facar dom\u00e9stico. En Sudam\u00e9rica, la stevia es un edulcorante natural desde hace siglos, por ejemplo, para la tradicional infusi\u00f3n de mate, en Asia se utiliza como sustituto del az\u00facar y edulcorante en los alimentos desde la d\u00e9cada de 1970, y en Europa est\u00e1 permitida como extracto desde 2011. La stevia tiene un sabor dulce y al mismo tiempo amargo, como el del regaliz.<\/mark><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">\u00bfC\u00f3mo se encuentra la stevia en los alimentos?<\/mark><\/h2>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">Puedes comprar la stevia como polvo de hoja verde o como polvo de extracto blanco. La planta o sus hojas no est\u00e1n permitidas como edulcorantes en los productos de la Uni\u00f3n Europea, s\u00f3lo los gluc\u00f3sidos extra\u00eddos. En la lista de ingredientes figuran como estevi\u00f3sido, gluc\u00f3sidos de esteviol o aditivo E960.<\/mark><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">\u00bfEs la stevia un sustituto saludable del az\u00facar?<\/mark><\/h2>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">Lo cierto es que las propiedades del stevia son considerables: La stevia no tiene calor\u00edas, pero es dulce y no favorece la aparici\u00f3n de caries. No afecta a los niveles de az\u00facar en sangre ni a la secreci\u00f3n de insulina, por lo que es adecuado para los diab\u00e9ticos. Como la stevia tolera bien el calor, tambi\u00e9n puedes endulzar con ella los platos calientes.<\/mark><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">\u00bfA qu\u00e9 hay que prestar atenci\u00f3n?<\/mark><\/h2>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">Al igual que con todos los edulcorantes, existe una dosis diaria recomendada para la Stevia que se considera segura para la salud &#8211; en el caso de la Stevia es un m\u00e1ximo de 4 mg por kilo de peso corporal (v\u00e9ase el Ministerio Federal de Evaluaci\u00f3n de Riesgos en Alemania como referencia, BFR).<\/mark><\/p>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-secondary-color\">En comparaci\u00f3n con el az\u00facar y los edulcorantes naturales como la miel o el sirope de \u00e1gave, la stevia tiene mucha menos masa y, por tanto, s\u00f3lo es parcialmente adecuada como sustituto del az\u00facar en la reposter\u00eda. Adem\u00e1s, el sabor amargo inherente puede aparecer si la concentraci\u00f3n es demasiado alta.
