W\u00e4hrend z.B. Sorbit und Erythrit zu den Zuckeraustauschstoffen z\u00e4hlen, die etwa die H\u00e4lfte der Kalorien enthalten, haben S\u00fc\u00dfstoffe, wie z.B. Saccharin oder Aspartam, keine Kalorien. Auch Stevia geh\u00f6rt zu diesen S\u00fc\u00dfstoffen.<\/span><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong><span class=\"has-inline-color has-secondary-color\">Was ist Stevia?<\/span><\/strong><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Stevia rebaudiana, Honigkraut oder S\u00fc\u00dfkraut genannt, ist eine urspr\u00fcnglich aus S\u00fcdamerika stammende Pflanze. In den Bl\u00e4ttern sind sogenannte Steviolglykoside enthalten, die im Blatt eine ca. 30-fache und isoliert eine 300-fach st\u00e4rkere S\u00fc\u00dfkraft besitzen als R\u00fcben- bzw. Haushaltszucker. In S\u00fcdamerika ist Stevia seit Jahrhunderten ein nat\u00fcrliches S\u00fc\u00dfungsmittel, z.B. f\u00fcr den traditionellen Mate-Tee, in Asien seit den 1970ern als Zuckerersatz und S\u00fc\u00dfstoff in Lebensmitteln genutzt und in Europa seit 2011 als Extrakt erlaubt. Stevia schmeckt s\u00fc\u00df und gleichzeitig auch bitter und nach Lakritz.<\/span><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong><span class=\"has-inline-color has-secondary-color\">Wie kommt Stevia in Lebensmitteln vor?<\/span><\/strong><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Du kannst Stevia als gr\u00fcnes Blattpulver oder als wei\u00dfes Extraktpulver kaufen. Als S\u00fc\u00dfungsmittel in Produkten ist in der EU nicht die Pflanze oder deren Bl\u00e4tter zugelassen, sondern nur die extrahierten Glykoside. Sie sind in der Zutatenliste entweder als Steviosid, Steviolglycoside oder Zusatzstoff E960 gekennzeichnet.<\/span><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong><span class=\"has-inline-color has-secondary-color\">Ist Stevia ein gesunder Zuckerersatz?<\/span><\/strong><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Stevia ist kalorienfrei, trotzdem s\u00fc\u00df und f\u00f6rdert keine Karies. Der Blutzuckerspiegel und Insulinaussch\u00fcttung werden durch den Verzehr nicht beeinflusst, was es dadurch auch f\u00fcr Diabetiker geeignet macht. Da Stevia Hitze gut vertr\u00e4gt, kannst Du damit auch warme Speisen vers\u00fc\u00dfen.<\/span><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong><span class=\"has-inline-color has-secondary-color\">Was solltest Du beachten?<\/span><\/strong><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Es gibt, wie f\u00fcr alle S\u00fc\u00dfstoffe, auch f\u00fcr Stevia eine empfohlene Tagesdosis, die als gesundheitlich unbedenklich gilt &#8211; f\u00fcr Stevia sind das max. 4mg pro Kilogramm K\u00f6rpergewicht (siehe Bundesministerium f\u00fcr Risikobewertung, BfR).<\/span><\/p>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Stevia hat verglichen mit Zucker und nat\u00fcrlichen S\u00fc\u00dfungsmitteln wie Honig oder Agavensirup sehr viel weniger Masse und ist daher f\u00fcrs Backen als Zuckerersatz nur anteilig geeignet. Zudem kann der bittere Eigengeschmack bei zu hoher Konzentration durchkommen. Aus \u00f6kologischer Sicht ist Stevia wegen seines komplexen Herstellungsverfahrens umstritten.<\/span><\/p>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\"><strong><span class=\"has-inline-color has-secondary-color\">Fazit:<\/span><\/strong><\/h2>\n\n\n\n<p><span class=\"has-inline-color has-secondary-color\">Stevia bietet Dir eine kalorienfreie Zuckeralternative auf dem Weg zu Deinem Wohlf\u00fchlgewicht. Als S\u00fc\u00dfe in einem Shake oder wenn der Hei\u00dfhunger auf S\u00fc\u00dfes kommt, kann Dir Stevia eine kleine sorgenfreie Freude bereiten.
